Gluten Free Bread in the Bread Machine

I have been on a mission to improve my health for at least 7 years now. It has been quite a process but also a super rewarding one. The big bonus is that Doug and I have both lost weight and we feel good! One of the foods that I had given up on this journey is bread. I had just resigned myself to it. It just wasn’t worth not feeling good. There were times I would long for it though. I have spent a lot of time altering beloved family recipes so that we could still enjoy them. Bread is the final frontier.
I honestly didn’t even try to make homemade bread again until my son gifted us with a bread machine a few years ago for Christmas. And then I thought “why not?” So, I have tweaked and tweaked this recipe to get the ingredients right. There is nothing like freshly sliced, warm steaming bread with melted butter on it. I cannot tell you how fabulous it has been to be able to eat bread again! What a joyous treat! If you are gluten free, I hope you enjoy this bread as much as we do!
Gluten-Free Bread in the Bread Machine
Wet Ingredients:
1-½ c warm water (between 90-110 degrees)
2 Tablespoons maple syrup
¼ c avocado oil
3 egg whites at room temperature
1 tsp apple cider vinegar
Dry Ingredients:
2-½ cups gluten free flour (King Arthur)
½ c almond flour
¼ c ground flax seed
2 tablespoons psyllium husk powder
1 tsp baking powder
1 tsp salt
2-¼ tsp dry active yeast (bread machine) (reserve for last step)
Directions: Place all wet ingredients in the bread machine. Blend the dry ingredients, except for the yeast. Add to the bread machine. Make a hole in the middle with your finger and put in the yeast.
Set the bread machine to the gluten free setting. I like to keep an eye on the dough during the initial mix. If it looks dry, I’ll add in more warm water, 1 tsp at a time until the dough looks like it’s mixing well. There are times, I add up to 5-6 teaspoons. You want your dough to look elastic and pliable. If the dough looks crumbly at all, add more water slowly until the consistency looks like typical bread dough.
Once the bread is done, carefully remove the insert and turn it upside down on a cutting board. Don’t forget to remove the blade from the bread machine carefully with a fork or knife. Now you are ready to slice the bread and enjoy! Put some butter on it – you can thank me later! 😊
