Paradise Eggnog (Dairy-Free)
My husband absolutely LOVES eggnog…
…and I absolutely hate it. 🤣
I’ll admit that I have never understood his love for the thick, overly sweet eggnog you buy in the store. But every year, he would come home with a carton of it with a big old grin on his face so he could get his eggnog fix.
Once Doug got diagnosed with diabetes, eggnog was off the menu yet he still longs for it every holiday season. So this year, he started playing around with the idea of making a healthier version that he can enjoy. I have to say, this recipe makes me an eggnog convert. It’s good ya’ll! Really good! Who says you can’t have your cake and eat it too?
Dairy-free Paradise Eggnog
1 shot spiced rum (Sailor Jerry’s)
1 shot water
1-½ shot coconut cream/milk (we use this brand)
5-6 drops liquid stevia (we use this brand)
Ice
Cinnamon
Cinnamon Stick (for garnish)
Shredded Coconut (for the rim)
Directions: Place ingredients in a glass except for the cinnamon. Use a frother to blend. Sprinkle cinnamon on top and add a cinnamon stick for garnish. Enjoy!
