Sumi Salad aka Broccoli Slaw
Many years ago one of my friends shared this yummy recipe with me.
I misunderstood her and thought she called it “Sumi Salad” which she actually thought was really funny because I work at a law firm – get it.... “sue me salad”? The name of the recipe is actually Fumi Salad but not at my house. It’s called Sumi Salad! 😊 My kids love this salad because the original version has ramen noodles. I’ll include that version as well. Since Doug and I have cleaned up our diets, I make it without the ramen noodles and the spice packet and we love it! So I encourage you to give this healthier version a try!
Sumi Salad (Clean Version)
1 bag of broccoli slaw
¼ c. chopped purple onion (or green onions)
⅓ c. of white vinegar (red wine vinegar or rice vinegar also work)
⅓ c. of light olive oil
2 Tablespoons of sliced almonds (optional)
2 Tablespoon of toasted sesame seeds
Salt and Pepper to taste
Directions: Dump the broccoli slaw in a bowl, add onion and sesame seeds, toss to mix, mix vinegar, oil, salt and pepper in a measuring cup and then pour over salad. Toss to coat with the dressing. Add more salt and pepper if needed.

Sumi Salad (Original Version)
1 bag of broccoli slaw
1 pkg of chicken ramen noodles, spice pack reserved
¼ c. chopped purple onion (or green onions)
⅓ c. of white vinegar (red wine vinegar or rice vinegar also work)
⅓ c. of light olive oil
2 Tablespoons of sliced almonds (optional)
2 Tablespoons of toasted sesame seeds
1 Tablespoon of sugar
1 teaspoon of seasoning salt
Salt and Pepper to taste
Directions: Dump the broccoli slaw in a bowl, add onion, slivered almonds and sesame seeds. Break up ramen noodles and toss to mix. Mix vinegar, oil and the ramen seasoning packet in a measuring cup and then pour over salad. Toss to coat with the dressing. Add more salt and pepper if needed.
NOTE: If using the ramen seasoning packet, I would omit the seasoning salt.
